Pop-Up - National Empanada Day by La Sofrita

Oh joy of joys! National Empanada Day is April 8th and La Sofrita is going to celebrate it with an Empanada Pop Up!!! We will have our usual line up of empanadas that many of you have come to know and love, and we'll be introducing a new vegetarian option. AND...we will have dessert empanadas! With ice cream!! Empanadas a la mode!!! (Are your knees buckling yet? You're welcome). Exact offerings yet to be determined, but I'm fantasizing about chocolate, dulce de leche, tropical fruit....The empanada fairies will work their magic and create something delicious for you!

Pernil will be on board to help us celebrate. Slow-roasted pork shoulder stuffed with garlic mojo and roasted to juicy and mahogany delicousness, it just sings "WEPA!!"

For sides we will have our beloved achiote rice and stewed pink beans, and avocado-tomato-cucumber salad with cilantro-citrus vinaigrette.

Come early, if you wish, to enjoy a glass of wine or beer or a special cocktail created by the amazingly talented bartenders at Santa Cruz Food Lounge.
