Tea base simmering, intoxicating the air, poured into black ceramic chocolate pot and whisked frothy with molinillo

-Papaya/Seed Salad with Rose petals, fresh herbs and edible flowers
-suggested pairing: Equinox Brut Rose Sparkling Wine

-Torched/Grilled Oysters with Bone Marrow Butter and fresh-ground nutmeg
-suggested pairing: Bartolo Santa Lucia Fiano 2013

-Pibil Wild Boar Sausage, Mole Negro, Cast-Iron Candy Cap Corn Bread, Queso Fresco, Cilantro, Sesame
-suggested pairing: Santa Cruz Cider Company Gravenstein Cider

-Elotes: Blackened Corn with chipotle aioli, cotija, pan-toasted cacao nib caramel popcorn
-suggested pairing: Equinox Winery Sparkling Blanc-du-Blanc

-Beet ‘n Heart: Roasted beets, and Grilled beef heart cubes
-suggested pairing: Bartolo Santa Cruz Mountain Merlot

-Creme Brulee: White Chocolate Chili Rose custard, Plantains Foster (Mezcal/Rum mix?), and Sweet Vanilla Corn Foam
